La storia di un amaretto -The italian macaron's story












Vi è mai capitato a trovare un tesoro?

Cioè per esempio scendere in cantina a cercare che so il set di bourguignon mai usato, ricevuto in regalo per le nozze vent'anni fa e trovare una scatola misteriosa, aprirla e scoprire …un tesoro!! La scatola nera , sottile che tenevo tra le mie mani  nascondeva un libro….Già il titolo prometteva bene…BISCOTTI..
Sfogliando le sue pagine si è rilevato un libro prezioso..ma non di ricette come si potrebbe pensare dal titolo…Guardando le immagini del libro mi sono subito appassionata e ho deciso di pubblicare le immagini e le storie più belle delle più grandi e  famose fabbriche di biscotti nati ancora nel diciannovesimo secolo . I biscotti  erano confezionati in scatole di latta, decorate dai più famosi designer dell'epoca e custoditi nei salotti come le portagioie delle signore dell'alta società.

Sul finire del settecento si diffonde in Italia la moda del caffè-pasticceria , luogo di ritrovo dove la nobiltà e l’emergente borghesia si incontrava per due chiacchere tra una
degustazione e l’altra. Alcuni dei più famosi ritrovi milanesi appartenevano alla famiglia Lazzaroni, (la pasticceria di Via Montenapoleone, il caffè Merlo ,il cui il gestore era celebre per la sua pigrizia
tante che nacque il motto: ‘Peccàa che el Lazzaron el sia un merlo e el Merlo un lazzaron”

Il Lazzaroni in questione era Carlo Lazzaroni (1774-1835) che possiamo considerare come il fondatore della dinastia saronnese il cui nome ci fa venire in mente immediatamente gli  amaretti.
Questo particolare tipo di biscotti prodotti a Saronno era già noto ai buongustai lombardi: già le guide ottocentesche consigliavano ai viaggiatori la degustazione dei amaretti. Carlo Lazzaroni sfruttò e ampliò la fama gastronomica del paese acquisendo piccoli laboratori e diffondendo su scala industriale gli amaretti ed altri suoi prodotti in Italia e all’estero.

Nacque allora il marchio di fabbrica che sembra che riproduca il Vapore Menabrea della Compagnia Rubattino ,impegnato a Trasportare la prima partita di amaretti esportata nell’America
Del Sud .


























La prima vera fabbrica viene aperto agli inizi degli anni trenta dal Davide Lazzaroni che sviluppò la produzione non solo di amaretti ma anche biscotti all’uovo e di panettoni. Con l’apporto del cugino Luigi, già famoso per la produzione di canditi e liquori, la giovane azienda si afferma e diventa
uno dei pilastri dell’industria alimentare italiana.

I loro prodotti  si arricchiscono  presto con specialità ‘medicamentosi’ e ‘dietetici’ e in quel’epoca
che nascono molti dei biscotti più famosi della Lazzaroni.



























Luigi muore nel 1933 , assume la guida dell’ azienda suo secondo figlio, Mario .
Negli anni trenta i biscotti Lazzaroni furono confezionati in piccoli pacchetti e nelle ‘biscottiere’ deliziosi oggetti di sapore inglese ,decorati dai designer più famosi dell'epoca, tipici soprammobili di sale e salotti pulitissimi delle dimore dei ceti emergenti fra le due Guerre.

Ezek a hires tervezok àltal diszitett dobozok èkesitettèk az elokelo holgyek nappali szobàjàt, majdnem olyan èrtèkesek voltak mint az èkszertartò dobozok.

A kegnagyobb olasz kekszgyàr tortènete


A 18.szàzad vège felè az olasz arisztokràciai korokben divatos lett  kàvèhàzba jàrni, finom apròsutemènyek ès egy csèsze kàvè vagy tea mellett csevegni .
Sok hires kàvèhàzban igazi kultùràlis kozpontok alakultak ki. A leghiresebb milànòi kàvèhàzak a
Lazzaroni csalàd tulajdonàba tartoztak :pèldàul a Montenapoleone utca cukràszdàja vagy a Merlo kàvèhàz. A Saronno-i dinasztia igazi alapitòja Carlo Lazzaroni volt, neve egyet jelent a hires olasz mandulàs apròsutemènnyel (amaretti)

Ez a finom, kulonleges, Saronno vàrosàbòl szàrmazò apròsutemèny màr a 19-ik szàzadban igen ismert volt, mèg az utikonyvek is ajànlottàk a Saronnoi amaretti kòstolàst.

Carlo Lazzaroni-nak koszonhetoen nolt meg a vàrosgasztronomiai hirneve, sok kis cukràszda tulajdonosa lett ahol gyakorlatilag ipari szinten kèszitettèk a mandulàs apròsutemènyeket.

Az apròsutemènyek ès kekszek mellett dietètikus ès gyògyhatàsù termèkeket is kezdtek gyàrtani.

1933-ban Luigi halàla utàn Màrio vette àt a cèg vezetèsèt. A harmincas èvekben Màrio otlete utàn hires tervezok rajzoltàk a Lazzaroni sutemènyek ès kekszek papir vagy bàdog dobozàt.

Around the end of the 18th century coffee-houses became fashionable all over Italy, and the aristocracy as well as the emerging upper-middle classes would meet in these places to chat over cups of coffee and various products o f the confectioner’s art,  many of the coffee houses became  centre of culture. Some of the most famous places in Milan  belonged to the Lazzaroni family, for example the confectioner’s in Via Montenapoleone or the most famous of all the Merlo coffee House. Carlo Lazzaroni was the true  founder of the dynasty of Saronno whose name is synonymous with
the famous amaretti macaroons.

This particular type of biscuit, produced in Saronno was already well known to the Gourmets of Lombardy; all the nineteenth-century guidebooks recommended the travelles to taste delicious Amaretti of Saronno. Carlo Lazzaroni exploited and increased the gastronomic fame of his native town, buying up various small workshops in the place and producing amaretti or other types of cookies on more or less industrial scale. The ship which appears on every packet of amaretti
and later become the  Company ‘s trade mark, represent the steamer Menabrea belonging to the Rubattino Company which carried the first consignment of amaretti exported to South America.



The first real biscuit factory was the work of Carlo ‘s son Davide, who developed productions not only of amaretti but also cookies containing eggs and the famous Italian cake: Panettone

With the help of cousin Luigi, already famous producer of candied food and liqueurs the firm went ahead and became a pillar of the Italian food industry. List of products soon began to include a number of specialities ,'medicamentous and dietetic' products.

Luigi died in 1933 , his second sun Mario took over the running of the firm. In the brilliant Thirties the most famous manes designed Lazzaroni packets

It was Mario who sells his biscuits wrapped in a small packets and in biscuits tin.
